  • 1 pound ground beef
  • 4 ounces pureed beef liver (see notes)
  • 1 large egg (optional; see notes)
  • 1 teaspoon kosher salt
  • 1 teaspoon tallow or another heat-tolerant fat, for the pan

Instructions

  1. Combine the ground beef, pureed liver, egg, and salt in a medium bowl. Mix thoroughly with your hands until fully combined. Divide the mixture into 4 equal portions and shape into patties about 4 inches in diameter.
  2. Heat a large cast-iron skillet over medium-high heat for about 5 minutes, until it begins to smoke lightly. Add the tallow, swirling to coat the pan evenly.
  3. Place the burger patties in the skillet and cook for 3 to 4 minutes per side, or until a crust forms and the burgers are medium done (internal temperature of about 140°F). For well-done burgers, cook for about 5 minutes per side, or until the internal temperature reaches 160°F.
  4. Remove from heat and serve immediately with your favorite burger toppings and buns, or enjoy as-is for a low-carb option.

Notes for Success

  • How to Puree Liver: Use a blender or food processor to blend raw liver until smooth, which should only take about 30 seconds.
  • Dietary Variations: To keep these burgers lion diet-friendly, omit the egg.
  • Food Safety: Unlike steaks, burgers are best cooked to at least medium due to the way ground meat is processed. For safety, consider cooking to well-done.

Why Liver Works for the Carnivore Diet

Beef liver is one of the most nutrient-dense foods available, providing essential vitamins like A, B12, and iron. Incorporating liver into recipes like these burgers is a great way to reap its benefits while masking the taste. Combined with ground beef, it adds juiciness and richness without being overpowering.

Serve these burgers plain or topped with bacon and cheese for a decadent carnivore meal. For a unique twist, pair them with All-Purpose Waffles as buns. This recipe is proof that nutrient-dense eating can be both delicious and family-friendly!
