  • 2 cups 14 ounces granulated sugar, divided
  • cup whole milk
  • 2 tablespoons vanilla extract
  • 2 large egg yolks
  • 4 teaspoons baking powder
  • ½ teaspoon table salt
  • 1 ¾ cups 7 ¾ ounces all-purpose flour
  • 3 cups boiling water

Instructions
 

  • Preheat oven to 325°F and position the rack in the middle. Melt butter, chocolate, and ⅔ cup cocoa powder in a 5-quart Dutch oven over low heat, stirring frequently until smooth (2 to 4 minutes). Remove from heat and let cool slightly.
  • In a separate bowl, mix brown sugar, ⅔ cup granulated sugar, and remaining ⅔ cup cocoa powder, breaking up any lumps.
  • Whisk milk, vanilla, egg yolks, baking powder, salt, and the remaining 1 ⅓ cups granulated sugar into the cooled chocolate mixture. Stir in flour until just combined.
