Ingredients
  

  • 4 medium sweet potatoes
  • 2 eggs
  • 1 tsp vanilla
  • 3 tbsp brown sugar
  • pinch of salt
  • 1 tsp cinnamon
  • 3 tbsp butter melted

For the topping:

  • 3/4 cup oats
  • 1/2 cup brown sugar
  • 3 tbsp melted butter

Instructions
 

  • Preheat oven to 375°F. Wash and poke holes in sweet potatoes, then bake for 45 minutes or until tender.
  • Allow sweet potatoes to cool, then scoop the flesh into a bowl and mash until smooth.
  • Add eggs, vanilla, 3 tbsp brown sugar, salt, cinnamon, and 3 tbsp melted butter to the mashed sweet potatoes. Mix well.
  • In a separate bowl, combine oats, 1/2 cup brown sugar, and 3 tbsp melted butter for the topping.
  • Grease a small baking dish and spread the sweet potato mixture evenly inside.
  • Sprinkle the topping mixture over the sweet potato filling, ensuring even distribution.
  • Bake in the oven for 30 minutes or until the topping is golden brown and the casserole is heated.
  • Remove from the oven, let cool slightly, and serve.
