Instructions
Prepare the Broth and Pork:
In the slow cooker, whisk together the chicken broth and white miso.
Add the shiitake mushrooms, scallion whites, garlic, and ginger.
Sprinkle the pork butt roast with pepper and place it into the slow cooker.
Cover and cook on high for 5 to 6 hours or low for 8 to 9 hours, until the pork is tender and reaches an internal temperature of 195°F.
Transfer the pork to a cutting board and let it rest for 20 minutes.
Add Kombu (Optional):
While the pork rests, add kombu to the broth mixture in the slow cooker and cook, covered, on high for 10 minutes.
Using a slotted spoon, remove and discard the scallion whites, garlic, ginger, and kombu, leaving the mushrooms in the broth.
Cook the Noodles:
Add the ramen noodles to the slow cooker and cook on high for 8 minutes, or until tender.
Assemble the Bowls:
Slice the rested pork in half lengthwise, then cut crosswise into 1/4-inch-thick slices.
Divide the noodles and mushrooms among serving bowls.
Ladle the broth into each bowl and top with 3 or 4 slices of pork and scallion greens.
Serve
Pass the toasted sesame oil and chili oil at the table for drizzling over individual portions as desired.
