Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the pumpkin puree, egg, vanilla extract, and orange food coloring to the butter mixture. Mix until all ingredients are well combined.
In a separate bowl, combine the all-purpose flour, baking soda, pumpkin pie spice, and salt. Whisk the dry ingredients together until evenly distributed.
Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
Gently stir in the chocolate chips, mini marshmallows, and broken graham cracker pieces until they are evenly distributed throughout the dough.
Use a 1/2 inch cookie scoop or a spoon to drop rounded tablespoons of dough onto the prepared baking sheet. Make sure to leave about 2 inches of space between each cookie.
For an extra touch, press a few additional marshmallows, chocolate chips, and graham cracker pieces into the top of each cookie dough ball.
Place the baking sheet in the preheated oven and bake the cookies for 12 to 14 minutes. The edges should be golden brown, but the center should still be soft.
Once done, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer the cookies to a wire rack to cool completely.
