2 8-ounce filet mignons, about 1½ inches thick Kosher salt 1 tablespoon tallow or other heat-tolerant fat of choice for the pan

Preheat the oven to 400°F.
Heat a medium cast-iron skillet or oven-safe pan over medium-high heat for about 5 minutes.
Pat the steaks dry with paper towels and season them liberally with kosher salt.
Once the skillet is hot and starting to smoke, add the tallow and swirl to coat the pan.
Place the steaks in the skillet, presentation side down. Sear for 3 to 4 minutes without moving them to develop a golden crust.
Flip the steaks and sear for another 3 to 4 minutes. Transfer the steaks to a baking sheet.
Bake the steaks in the oven until they reach your desired doneness:
Medium-rare: Internal temperature of 125°F (about 8 minutes)
Medium: Internal temperature of 135°F (about 10 minutes)
Let the steaks rest for 5 to 10 minutes before serving to lock in the juices. Enjoy as-is or with your favorite sauce!
