Perfect Fillet Minion

Ingredients
  

  • 2 8-ounce filet mignons, about 1½ inches thick
  • Kosher salt
  • 1 tablespoon tallow or other heat-tolerant fat of choice for the pan

Instructions
 

  • Preheat the oven to 400°F.
  • Heat a medium cast-iron skillet or oven-safe pan over medium-high heat for about 5 minutes.
  • Pat the steaks dry with paper towels and season them liberally with kosher salt.
  • Once the skillet is hot and starting to smoke, add the tallow and swirl to coat the pan.
  • Place the steaks in the skillet, presentation side down. Sear for 3 to 4 minutes without moving them to develop a golden crust.
  • Flip the steaks and sear for another 3 to 4 minutes. Transfer the steaks to a baking sheet.
  • Bake the steaks in the oven until they reach your desired doneness:
  • Medium-rare: Internal temperature of 125°F (about 8 minutes)
  • Medium: Internal temperature of 135°F (about 10 minutes)
  • Let the steaks rest for 5 to 10 minutes before serving to lock in the juices. Enjoy as-is or with your favorite sauce!
