Ingredients
  

  • 1 tbsp olive oil
  • 3 cups turkey cooked
  • 4 cups egg noodles uncooked
  • 3 cups chicken broth or water
  • 1 cup frozen mixed vegetables
  • 2 tsp dried minced onions
  • 2 tsp of Herbes de Provence seasoning
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • 1 cup heavy cream
  • 1 cup Parmesan cheese shredded
  • ½ cup Mozzarella cheese shredded

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the cooked turkey and warm through.
  • To the pot, add the egg noodles, chicken broth (or water), frozen mixed vegetables, dried minced onions, Herbes de Provence seasoning, sea salt, garlic powder, and ground black pepper. Increase the heat to medium-high and bring the mixture to a boil. Cover the pot and cook for about 5 minutes or until the noodles begin to soften.
  • Reduce the heat to medium and stir in the heavy cream. Continue cooking, stirring occasionally, until the liquid reduces and thickens and the noodles are cooked through.
  • Gently fold in the shredded Parmesan and mozzarella cheeses until melted and well combined. If desired, garnish with fresh parsley before serving.
  • Serve the turkey noodle casserole immediately, enjoying the creamy, cheesy comfort of this quick and easy one-pot meal.
