Ingredients
  

  • 1 cup organic vegetable broth
  • 1 cup chopped zucchini
  • 1 cup chopped red bell pepper
  • ½ cup pitted kalamata olives (halved)
  • 2 garlic cloves (minced)
  • 2 15 oz cans cannellini beans, rinsed and drained
  • 1 14.5 oz can diced tomatoes, undrained
  • ¼ cup chopped fresh parsley
  • 2 tbsps balsamic vinegar
  • 2 tbsps fresh lemon juice
  • ¼ tsp freshly ground black pepper
  • 1 10 oz 10-ounce package couscous
  • 2 oz crumbled feta cheese (about 1/2 cup)

Instructions
 

  • Combine the first 7 ingredients in your slow cooker, give it a good stir, and let it cook on low for 4 hours. Then, stir in the fresh parsley and the remaining spices.
  • While the succotash is simmering, prepare the couscous according to the package directions, skipping any salt or fat. When everything is ready, spoon the vibrant succotash over the fluffy couscous and finish with a sprinkle of cheese.
