Ingredients
  

  • 1/2 lb pork loin sliced into thin strips
  • 2 large eggs
  • 2 tbsp tallow or clarified butter
  • Salt to taste
  • 1/4 tsp black pepper optional for flexible carnivore

Instructions
 

  • Preheat the air fryer to 400°F.
  • Prepare the pork loin strips: Season the pork loin strips with salt (and black pepper if desired for a flexible version).
  • Cook the pork loin strips: Place the pork strips in the air fryer basket in a single layer. Air fry for 8-10 minutes, flipping halfway through, until crispy and browned.
  • Fry the eggs: While the pork loin strips are cooking, heat a skillet over medium heat and melt the tallow or clarified butter. Crack the eggs into the skillet and fry until the whites are set and the yolks are still slightly runny, about 3-5 minutes.
  • Serve: Plate the crispy pork loin strips with the fried eggs on top or on the side. Serve immediately.
