Ingredients
  

  • 1 frenched rack of lamb about 1½ pounds
  • Kosher salt to taste
  • 1 tablespoon tallow or other heat-tolerant fat of choice for the pan

Instructions
 

  • Slice between each rib bone of the rack of lamb to separate it into individual chops, creating small "lollipops."
  • Pat the lamb chops dry with paper towels, then season generously with kosher salt on all sides.
  • Preheat a large cast-iron skillet over medium-high heat until it begins to smoke, about 5 minutes.
  • Add the tallow to the hot skillet, swirling it to coat the surface evenly. Place half the lamb lollipops into the skillet and sear for 2 to 3 minutes per side for medium-rare to medium doneness. Avoid touching the chops while searing to ensure a flavorful crust.
  • Repeat the process with the remaining lollipops. Serve immediately.
