Slice between each rib bone of the rack of lamb to separate it into individual chops, creating small "lollipops."
Pat the lamb chops dry with paper towels, then season generously with kosher salt on all sides.
Preheat a large cast-iron skillet over medium-high heat until it begins to smoke, about 5 minutes.
