Instant Pot Bacon & Gruyère Egg Bites

Mornings can be chaotic, but starting your day with a high-protein, carnivore-friendly breakfast can set the tone for success. These Instant Pot Bacon & Gruyère Egg Bites are inspired by the ever-popular Starbucks egg bites but designed to fit seamlessly into a carnivore or low-carb lifestyle.

Ingredients
  

  • 4 large eggs
  • 4 ounces ½ cup cream cheese
  • ¼ cup heavy cream
  • ½ cup shredded Gruyère cheese about 2 ounces
  • ½ teaspoon kosher salt
  • 3 slices thin-cut bacon cooked (see below for tips) and chopped

Instructions
 

  • Add all ingredients, except the bacon, to a blender and blend until the mixture is smooth.
  • Distribute the chopped bacon evenly among the wells of the egg bite mold.
  • Pour the egg mixture into the mold over the bacon, filling each well to the top.
  • Cover the mold with its lid (or aluminum foil if unavailable). Place the mold on the trivet and lower it into the Instant Pot with 1 cup of water in the pot.
  • Seal the Instant Pot lid and set to Manual High Pressure for 9 minutes. Once done, allow a natural release for 10 minutes, then carefully release any remaining pressure.
  • Remove the egg bites from the mold after cooling for 5 minutes and serve immediately or store for later.
