Combine the ground turkey, spinach, green onions, garlic, oregano, salt, and pepper in a medium-sized bowl. Use your hands to mix everything thoroughly until the ingredients are well distributed. Divide the mixture evenly and shape it into four patties.
Heat the olive oil in a large skillet over medium heat. Add the patties to the skillet and cook them for about 5 minutes on each side. The patties should develop a golden-brown crust and be cooked all the way through.
