Instructions
Preheat the oven: Set your oven to 400°F.
Prepare the topping: In a small bowl, mix together the chopped almonds, melted butter or olive oil, minced garlic, lemon zest, parsley, chives, salt, and pepper. Stir until evenly combined.
Assemble the cod: Place the cod fillets on a rimmed baking sheet. Evenly spread the almond mixture on top of each fillet, pressing lightly with your fingers to help the mixture adhere.
Bake: Place the baking sheet in the preheated oven and bake for 13 to 15 minutes, or until the fish is opaque, flakes easily with a fork, and the crust is lightly golden.
Serve: Remove from the oven, squeeze fresh lemon juice over the cod, and serve immediately with your choice of vegetables or greens.
Notes
Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
Reheating: Reheat on a baking sheet in a 275°F oven for 10–15 minutes or in the microwave in 30-second increments until warmed through. The cod can also be served cold in a salad.
