Ingredients
  

  • 1/2 cup raw almonds roughly chopped
  • 1 tablespoon melted butter or extra-virgin olive oil
  • 2 garlic cloves minced
  • 1 tablespoon lemon zest
  • 3 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh chives
  • 1/4 teaspoon kosher salt
  • Pinch of freshly ground black pepper
  • 4 cod fillets 6 ounces each
  • Lemon wedges for serving

Instructions
 

  • Preheat the oven: Set your oven to 400°F.
  • Prepare the topping: In a small bowl, mix together the chopped almonds, melted butter or olive oil, minced garlic, lemon zest, parsley, chives, salt, and pepper. Stir until evenly combined.
  • Assemble the cod: Place the cod fillets on a rimmed baking sheet. Evenly spread the almond mixture on top of each fillet, pressing lightly with your fingers to help the mixture adhere.
  • Bake: Place the baking sheet in the preheated oven and bake for 13 to 15 minutes, or until the fish is opaque, flakes easily with a fork, and the crust is lightly golden.
  • Serve: Remove from the oven, squeeze fresh lemon juice over the cod, and serve immediately with your choice of vegetables or greens.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Reheat on a baking sheet in a 275°F oven for 10–15 minutes or in the microwave in 30-second increments until warmed through. The cod can also be served cold in a salad.
