Ingredients
  

For the Chicken and Vegetables:

  • 3 boneless chicken breasts diced into 1-inch pieces
  • 2 cups broccoli florets
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 red bell pepper cut into 1-inch pieces
  • 1/2 cup shredded carrots
  • 2 tsp minced garlic
  • 1/2 teaspoon ground ginger
  • 2 tablespoons avocado oil
  • 2 tablespoons sesame seeds

For the stir-fry sauce:

  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch

Instructions
 

  • Preheat Blackstone griddle to medium-high heat (400°F).
  • Whisk together sauce ingredients in a small bowl and set aside.
  • Spread avocado oil across the cooking surface and create two cooking zones.
  • Add broccoli and carrots to one side, cooking for 2-3 minutes. Use a press if available to expedite cooking.
  • Place chicken on the other side, season with salt and pepper, and cook for 3-5 minutes, flipping regularly until golden brown.
  • Add bell peppers and cook until tender (1-2 minutes).
  • Combine chicken and vegetables, add garlic and ginger, and cook for 1 minute.
  • Pour sauce over everything and toss to coat. Cook for 1-2 minutes until sauce thickens.
  • Once the sauce has thickened, plate your stir fry over hot rice and finish with a shower of sesame seeds.
