Ingredients
  

  • 1 pound Italian chicken sausage links
  • 2 bell peppers yellow and orange
  • 1 onion
  • 6 oz mushrooms
  • 4 cloves garlic
  • 1 tablespoon Italian seasoning
  • kosher salt, pepper, crushed red pepper flakes
  • vegetable oil for the griddle
  • Optional: marinara sauce, provolone cheese

Instructions
 

  • Pre-cook the Italian chicken sausage if not already cooked (4-5 minutes per side at medium heat), allow to cool, then slice into 1-inch pieces. For pre-cooked sausage, simply slice into portions.
  • Cut bell peppers (yellow and orange) and onion into slices, slice mushrooms, and mince 4 cloves of garlic. Arrange all vegetables and sliced sausage on a single tray for easy access.
  • Season the arranged vegetables and sausage with Italian seasoning, kosher salt, black pepper, and crushed red pepper flakes, ensuring even distribution across all ingredients.
  • Heat the Blackstone griddle to medium-high temperature. Once hot, add vegetable oil and transfer all seasoned ingredients to the cooking surface. Using two spatulas, cook for 8-10 minutes, regularly flipping and stirring for even caramelization.
  • Transfer the cooked mixture back to the serving tray. For an enhanced version, top with marinara sauce and provolone cheese, allowing the residual heat to melt the cheese. Serve immediately while hot.
