Ingredients
  

  • 3 medium sweet potatoes about 2 pounds, peeled and cut into ½-inch cubes
  • 2 tablespoons real maple syrup
  • 1 tablespoon extra-light olive oil or vegetable oil
  • ¾ teaspoon fine sea salt
  • ½ teaspoon ground paprika
  • ¼ teaspoon freshly ground black pepper
  • 6 slices regular-cut bacon chopped

Instructions
 

  • Prepare the Oven: Set your oven to preheat at 425°F. While the oven warms, line a baking sheet with parchment paper and set it aside.
  • Season the Sweet Potatoes: In a mixing bowl, combine the diced sweet potatoes with the maple syrup, oil, salt, paprika, and black pepper. Toss everything together until the sweet potatoes are evenly coated in the mixture.
  • Spread and Add Bacon: Spread the seasoned sweet potatoes across the lined baking sheet in a single, even layer. Sprinkle the chopped bacon evenly over the top of the sweet potatoes.
  • Bake the Hash: Place the baking sheet in the oven and roast for 20 minutes. After 20 minutes, flip the sweet potatoes and bacon to ensure even cooking. Roast for an additional 10–12 minutes, or until the bacon is crispy and the sweet potatoes are tender.
  • Serve and Enjoy: Once done, transfer the roasted sweet potato and bacon hash to a serving platter. Serve it immediately, optionally pairing it with fried eggs and slices of avocado for a complete meal.

Notes

  • Use regular-cut bacon for best results, as thick-cut bacon takes longer to crisp and may affect cooking time.
  • To cube sweet potatoes efficiently, slice them into ½-inch-thick rounds, then into spears, and finally into cubes.
