Ingredients
  

  • 2 ½ cups fresh strawberries hulled and quartered
  • 1 ¼ cups canned unsweetened full-fat coconut milk
  • ¼ cup honey plus more to taste
  • 1 tablespoon freshly squeezed lemon juice

Instructions
 

  • Blend the Ingredients: In a blender or food processor, combine the strawberries, coconut milk, honey, and lemon juice. Blend until the mixture is mostly smooth with a few small strawberry bits for texture. Taste and adjust sweetness by adding more honey, if needed.
  • Fill the Molds: Use a funnel or measuring cup with a spout to pour the mixture into the ice pop molds. If your molds have built-in sticks, secure them in place. For molds requiring wooden sticks, freeze the mixture for about 1 hour before inserting the sticks.
  • Freeze: Freeze the pops for about 6 hours, or overnight, until fully set.
  • Unmold: When ready to serve, briefly run warm water over the outside of the molds to loosen the ice pops. Gently slide them out and enjoy!

  • These pops are naturally dairy-free, thanks to the creamy texture of coconut milk.
  • Feel free to experiment with other fruits, such as raspberries or mangoes, for different flavor variations.
