Ingredients
  

Spiced Lamb Topping:

  • 1 pound lean ground lamb
  • 1 medium yellow onion diced
  • 2 garlic cloves minced or grated
  • Zest of 1 lemon
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground cayenne pepper
  • Kosher salt and freshly ground black pepper
  • cup fresh parsley chopped

Hummus Base and Garnish:

  • 2 cups extra-smooth hummus homemade or store-bought
  • 4 ounces feta or goat cheese crumbled
  • Seeds from 1 pomegranate optional
  • Extra-virgin olive oil for serving
  • Handful of fresh herbs for serving
  • Flatbread or pita chips for serving

Instructions
 

  • Cook the Lamb Mixture: Heat a large skillet over medium-high heat. Add the ground lamb and diced onion, using a spoon to break the lamb into smaller pieces as it cooks. Sauté until the lamb is browned, about 5 to 8 minutes.
  • Add Seasonings: Stir in the minced garlic, lemon zest, cumin, paprika, oregano, cayenne, and a pinch each of salt and black pepper. Continue cooking, stirring occasionally, until the lamb is fully cooked and the spices are fragrant, about 5 minutes. Remove from heat and mix in the chopped parsley. Taste and adjust with more salt and pepper if needed.
  • Assemble the Dish: Divide the hummus evenly among four to six serving bowls. Spoon the lamb mixture over the top of each portion. Add crumbled feta or goat cheese and sprinkle with pomegranate seeds if desired.
  • Add Final Touches and Serve: Drizzle a little extra-virgin olive oil over each bowl and garnish with fresh herbs. Serve immediately with flatbread or pita chips for dipping and scooping.

  • To make this vegetarian, substitute the lamb with roasted and spiced chickpeas or lentils.
