Instructions
Prepare the Oven: Position a rack in the center of the oven and preheat it to 400°F.
Make the Spice Rub: Combine the sea salt, Italian seasoning, garlic powder, coriander, and black pepper in a small bowl.
Prep the Pork: Pat the tenderloin dry with paper towels, then pierce it all over with a fork to help the seasoning penetrate. Rub the tenderloin with 1 tablespoon of oil, then evenly coat it with the spice mixture.
Sear the Pork: Heat the remaining tablespoon of oil in a cast-iron or oven-safe skillet over medium-high heat. Add the tenderloin and sear it on all sides, about 2 minutes per side, until golden brown.
Roast the Pork: Transfer the skillet to the oven and roast the tenderloin for 8 minutes. Flip the pork and continue roasting for another 5–7 minutes, or until the internal temperature reaches 145°F on a meat thermometer.
Rest and Slice: Transfer the pork to a cutting board and let it rest for 5–10 minutes before slicing.

Silver Skin Removal: To ensure tenderness, remove the silver skin from the pork.
