Ingredients
  

  • Extra-virgin olive oil
  • ½ pound No-Knead Bread and Pizza Dough or store-bought pizza dough
  • cup Lemon Basil Pesto store-bought or homemade
  • cup shredded white cheddar cheese
  • 1 medium potato very thinly sliced
  • 2 tablespoons Everything Bagel Spice store-bought or homemade
  • 8 ounces burrata cheese torn
  • Fresh basil leaves for garnish
  • Fresh thyme leaves for garnish

Instructions
 

  • Preheat the Oven: Set your oven to 450°F and lightly oil a baking sheet to prevent sticking.
  • Roll and Prepare the Dough: Roll out your pizza dough on a floured surface until it’s about ¼-inch thick. Place it carefully onto the prepared baking sheet, leaving room for a crust around the edges. Spread a thin, even layer of lemon basil pesto over the surface, stopping about 1 inch from the edges. Sprinkle the shredded white cheddar cheese on top, followed by an even layer of thinly sliced potatoes.
  • Season and Bake: Drizzle the pizza with olive oil and evenly sprinkle the everything bagel spice over the top. Place the pizza in the oven and bake for 10 to 15 minutes, or until the crust is golden and the potato slices are crispy.
  • Add Burrata and Garnish: Once the pizza is out of the oven, tear the burrata cheese into pieces and scatter them across the warm pizza. Let the cheese sit for about 5 minutes to soften. Finish by garnishing with fresh basil and thyme leaves. Drizzle with a bit more olive oil if desired, slice, and serve immediately.

  • Use a mandoline slicer for the most consistent and thinly sliced potatoes, which will bake evenly and turn crisp. If unavailable, a sharp knife works well with careful slicing.
