Instructions
Blend the Dressing: In a food processor, combine the olive oil, pistachios, balsamic vinegar, honey, chopped basil, thyme, garlic, red pepper flakes, and a pinch of salt. Process the ingredients until they form a smooth, flavorful mixture, approximately one minute.
Prepare the Salad Base: Place the halved cherry tomatoes and nectarine wedges into a medium-sized bowl. Pour the prepared pistachio vinaigrette over the top and toss until the fruits are well coated. Allow the mixture to sit for 10–20 minutes at room temperature to enhance the flavors, or refrigerate it covered with plastic wrap overnight for an even deeper infusion.
Serve the Salad: Evenly distribute the marinated tomatoes and nectarines into six serving bowls. Tear the burrata cheese into smaller pieces and place them on top of each salad. Garnish with chopped chives and finish with a sprinkle of flaky sea salt just before serving.
Notes
For a nuttier flavor, substitute pistachios with almonds or walnuts.
Add microgreens or arugula for an extra layer of freshness.
This dish pairs beautifully with crusty bread or grilled chicken for a heartier meal.
