Instructions
Prepare the Marinade and Shrimp: In a large resealable bag, combine the shrimp, 3 tablespoons of olive oil, honey, garlic, chopped jalapeños, lime juice, and lemon juice. Close the bag and toss everything together until the shrimp is evenly coated. Place the bag in the refrigerator and let the shrimp marinate for 15 to 30 minutes.
Cook the Shrimp: Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. When the oil begins to shimmer, use a slotted spoon to remove the shrimp and garlic from the marinade (keep the marinade for later). Place the shrimp in the skillet and cook for about 2 minutes on each side until they turn pink and are lightly golden.
Make the Sauce: Pour the reserved marinade into the skillet along with the butter. Add a pinch of salt and freshly ground pepper, then stir the mixture as it cooks. Allow the butter to melt and the sauce to thicken slightly, which should take 1 to 2 minutes. Once the garlic is golden and fragrant, remove the skillet from the heat.
Finish and Serve: Stir in the fresh cilantro just before serving. Enjoy the shrimp over rice, in tacos, or with your favorite slaw.
Notes
Adjust the spice level by reducing or increasing the amount of jalapeños.
For a more tropical twist, add diced mango or pineapple to the marinade.
This recipe pairs wonderfully with crusty bread to soak up the flavorful sauce.
