  • 2 shallots thinly sliced
  • ½ pound pizza dough store-bought or homemade
  • 2 tablespoons apple butter
  • 1 Honeycrisp apple thinly sliced
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded sharp cheddar cheese
  • ½ small butternut squash shaved into ribbons using a vegetable peeler
  • 8 fresh sage leaves
  • 3 ounces thinly sliced prosciutto torn
  • Kosher salt and freshly ground black pepper to taste
  • Crushed red pepper flakes to taste
  • 2 ounces blue cheese crumbled (optional)
  • Honey for drizzling
  • Fresh thyme leaves for garnish

Instructions
 

  • Set the Oven and Prepare the Pan: Start by preheating your oven to 450°F (232°C). Lightly grease a baking sheet with olive oil to prevent sticking.
  • Cook the Shallots: In a medium skillet, heat 1 tablespoon of olive oil over high heat. Add the sliced shallots and sauté them for about 2–3 minutes, or until they become fragrant and slightly golden. Remove the skillet from the heat and set it aside.
  • Roll Out the Dough: On a floured surface, roll out the pizza dough until it’s about ¼-inch thick. Carefully move the dough onto the greased baking sheet, spreading it out evenly.
  • Build the Pizza: Using a spoon or spatula, spread the apple butter over the pizza dough, leaving a small border around the edges. Evenly distribute the cooked shallots, followed by the thinly sliced apple. Sprinkle the shredded mozzarella and cheddar cheese over the top. Arrange the butternut squash ribbons, sage leaves, and torn pieces of prosciutto across the pizza. Season with a pinch of kosher salt, black pepper, and a light sprinkle of red pepper flakes for added flavor. If you’re using blue cheese, crumble it over the pizza now.
  • Bake: Place the pizza in the oven and bake for 10–15 minutes. The pizza is ready when the crust turns golden and the cheese is fully melted and bubbling.
  • Finish and Serve: Once baked, remove the pizza from the oven. Drizzle it lightly with honey for a touch of sweetness, then sprinkle fresh thyme leaves over the top for garnish. Slice the pizza into pieces and serve immediately while warm.

  • For a vegetarian option, omit the prosciutto and consider adding roasted walnuts or pecans for extra texture.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven for best results.
  • Substitute Honeycrisp apples with other sweet apple varieties like Fuji or Gala if unavailable.
