Ingredients
  

For the Chicken Fritters:

  • pounds chicken breasts about 3 large, diced into ½-inch pieces
  • 1⅓ cups shredded mozzarella cheese
  • 2 large eggs lightly beaten
  • cup mayonnaise
  • cup all-purpose flour or substitute cornstarch for a gluten-free option
  • tablespoons chopped fresh dill
  • ½ teaspoon fine sea salt plus more to taste
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons extra-light olive oil or vegetable oil plus more as needed

For the Garlic Aioli Dip:

  • ¼ cup mayonnaise
  • 1 garlic clove pressed or grated
  • ½ tablespoon freshly squeezed lemon juice
  • ¼ teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper

Instructions
 

  • Mix the Fritter Ingredients: Combine the diced chicken, mozzarella cheese, eggs, mayonnaise, flour, dill, salt, and pepper in a large mixing bowl. Stir the mixture thoroughly until everything is evenly blended. For the best flavor and texture, refrigerate the mixture for at least 2 hours or overnight. If time is limited, you can proceed to cook the fritters right away.
  • Cook the Fritters: Heat a nonstick frying pan over medium heat and add a thin layer of oil. Using a spoon or scoop, drop about 1 heaping tablespoon of the chicken mixture into the pan for each fritter. Gently press down on the top of each fritter with the back of the spoon to flatten slightly. Fry the fritters for 3 to 4 minutes, or until the bottoms are golden brown. Flip them carefully and cook for another 3 minutes, ensuring the chicken is fully cooked through. Place the cooked fritters on a plate lined with paper towels to drain excess oil. Repeat the process with the remaining chicken mixture, adding more oil to the pan as needed.
  • Prepare the Garlic Aioli: In a medium bowl, whisk together the mayonnaise, grated garlic, lemon juice, salt, and pepper until smooth and creamy. This can be served immediately alongside the warm fritters as a flavorful dip.

Notes

Repurpose Leftovers: Use cooked chicken or rotisserie chicken for an even quicker preparation.
Gluten-Free Option: Replace flour with cornstarch or potato starch.
Make Ahead: Prepare the chicken mixture a day in advance, or cook the fritters ahead of time and refrigerate them. Reheat on a skillet over medium-low heat or enjoy them cold.
