Instructions
Preheat and Prepare the Pan: Heat the oven to 350°F (175°C) and grease a 9-inch springform pan with butter to prevent sticking.
Mix the Batter: In a large mixing bowl, combine the pancake mix, lavender, and ¾ cup of the brown sugar. Stir these ingredients together to ensure they’re evenly distributed. Add the melted butter, milk, eggs, and vanilla extract to the dry ingredients. Gently mix until everything is just combined, being careful not to overmix. Pour the batter into the prepared springform pan, spreading it out evenly. Scatter the blackberries across the top of the batter.
Prepare the Streusel Topping: In a separate small bowl, mix together the all-purpose flour, the remaining ¼ cup of brown sugar, and the ground cinnamon. Add the softened butter and use your hands to work it into the mixture until it forms a crumbly texture. Sprinkle this crumble topping evenly over the blackberries.
