Ingredients
  

  • ½ cup 1 stick salted butter, melted, plus more for greasing
  • cups Everyday Pancake Mix see Notes
  • 2 teaspoons dried culinary lavender see Notes
  • 1 cup packed light brown sugar divided: ¾ cup + ¼ cup
  • cup whole milk
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups fresh blackberries
  • ½ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • 4 tablespoons salted butter at room temperature

Instructions
 

  • Preheat and Prepare the Pan: Heat the oven to 350°F (175°C) and grease a 9-inch springform pan with butter to prevent sticking.
  • Mix the Batter: In a large mixing bowl, combine the pancake mix, lavender, and ¾ cup of the brown sugar. Stir these ingredients together to ensure they’re evenly distributed.
    Add the melted butter, milk, eggs, and vanilla extract to the dry ingredients. Gently mix until everything is just combined, being careful not to overmix.
    Pour the batter into the prepared springform pan, spreading it out evenly. Scatter the blackberries across the top of the batter.
  • Prepare the Streusel Topping: In a separate small bowl, mix together the all-purpose flour, the remaining ¼ cup of brown sugar, and the ground cinnamon.
    Add the softened butter and use your hands to work it into the mixture until it forms a crumbly texture. Sprinkle this crumble topping evenly over the blackberries.
  • Bake the Buckle: Place the pan in the oven and bake for 45 to 55 minutes. The buckle is ready when the crumble turns golden brown and a toothpick inserted into the center comes out clean.
  • Cool and Serve: Remove the buckle from the oven and let it rest for 5 minutes. Serve warm for the best flavor, or at room temperature if preferred. Leftovers can be stored at room temperature, covered, for up to 3–4 days.

Notes

Everyday Pancake Mix Substitute: Use 1½ cups all-purpose flour and 2 teaspoons baking powder if pancake mix isn’t available.
Lavender Alternative: If lavender isn’t to your taste, substitute with 1 teaspoon of ground cardamom for a warm, spicy note.
Serving Suggestion: This buckle pairs wonderfully with vanilla ice cream or a dollop of whipped cream.
