Equipment

  • Baking sheet
  • Parchment paper or foil
  • Small mixing bowl

Ingredients

  • 1 1½-pound salmon fillet, pin bones removed
  • 3 garlic cloves minced
  • 2 tablespoons chopped fresh parsley leaves
  • 2 tablespoons extra-light olive oil or vegetable oil
  • 2 tablespoons freshly squeezed lemon juice
  • teaspoons Dijon mustard
  • ½ teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • ½ lemon sliced into 4 rings

Instructions

  • Preheat the Oven: Heat your oven to 450°F. Cover a baking sheet with parchment paper or foil for easier cleanup.
  • Prepare the Salmon: Cut the salmon fillet into four evenly sized portions. Lay the pieces on the baking sheet, ensuring the skin side is facing down.
  • Mix the Sauce: In a small bowl, combine the minced garlic, chopped parsley, oil, lemon juice, Dijon mustard, salt, and pepper. Stir until the ingredients are thoroughly blended.
  • Coat the Salmon: Spread the prepared mixture evenly over the top and sides of each salmon piece. Place a lemon slice on top of each fillet for an extra touch of flavor.
  • Bake the Salmon: Place the baking sheet in the oven and bake for 12–15 minutes. The salmon is ready when it flakes easily with a fork and is fully cooked.
  • Serve Immediately: Take the salmon out of the oven and serve right away for the best taste and texture.

Notes

  • Removing Pin Bones: To ensure no bones remain, gently run your fingers along the fillet's surface. If you find any, use kitchen tweezers to carefully remove them.
  • Avoid Marination: Skip marinating the salmon beforehand. The acidity of the lemon can start cooking the fish if left too long. Instead, apply the sauce just before baking for optimal flavor.
  • Serve this dish with a side of roasted vegetables, rice, or a fresh salad for a complete meal.
  • For a touch of heat, add a small amount of crushed red pepper flakes to the garlic mixture.
