Grease the inside of your crockpot with cooking spray or butter.
In a large skillet, cook the crumbled turkey sausage over medium heat until browned. Drain excess fat and transfer the sausage to the crockpot.
Add the diced sweet potato, red bell pepper, and sliced mushrooms to the crockpot.
In a separate bowl, whisk together the eggs, milk, garlic powder, smoked paprika, salt, and black pepper. Pour the egg mixture over the sausage and vegetables in the crockpot.
Sprinkle the shredded Gruyère cheese on top of the egg mixture.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the eggs are set and the sweet potatoes are tender.
Once done, sprinkle the sliced green onions and chopped parsley over the top of the casserole.
