Ingredients
  

  • 1 tablespoon tallow or other heat-tolerant fat of choice for the pot
  • 1 pound bulk sausage of choice
  • 1 cup beef broth homemade or store-bought
  • 1 8-ounce package cream cheese
  • Kosher salt

Instructions
 

  • Preheat a medium-size Dutch oven or similar soup pot over medium-high heat. Once hot, add the tallow and swirl to coat the pot evenly.
  • Add the sausage to the pot. Cook, breaking it into small pieces, until browned and cooked through, about 10 minutes. Drain all but 2 tablespoons of the fat.
  • Stir in the beef broth and cream cheese. Cook over medium heat, stirring occasionally, until the cream cheese has melted and blended with the broth.
  • Reduce the heat to medium-low and let the soup simmer, stirring occasionally, until the flavors meld together and the soup is hot, about 10 minutes.
  • Taste and add salt as needed, keeping in mind that the sausage and broth may already provide enough seasoning.
