Crack Slaw, also known as Egg Roll in a Bowl, is a delicious low-carb dish that delivers all the flavors of a classic egg roll without the deep-fried wrapper. This quick and easy one-pan meal has earned its addictive nickname for good reason - it's so tasty you'll find yourself craving it.

Ingredients
  

  • 2 pounds ground beef or turkey
  • 2 packages cole slaw mix pre-shredded cabbage and carrots
  • 4 green onions finely chopped
  • 3 teaspoons minced garlic
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 teaspoons red pepper flakes
  • 2 teaspoons ground ginger
  • Optional: 1 packet of Splenda for a hint of sweetness

Instructions
 

  • Begin by heating a large skillet over medium heat. Add the ground meat and cook thoroughly, breaking it up with a spatula as it browns. Once fully cooked, drain any excess fat and set the meat aside.
  • In a separate, spacious pan or wok, warm the sesame oil over medium heat. Toss in the chopped green onions and minced garlic, stirring frequently until the onions soften and the garlic releases its aroma.
  • Next, introduce the soy sauce, ground ginger, and red pepper flakes to the pan, stirring to combine. Immediately add the cole slaw mix, tossing it gently to ensure even coating with the flavorful sauce. Allow this mixture to cook for approximately 5 minutes, or until the cabbage reaches a tender-crisp consistency.
  • Reintroduce the cooked ground meat to the pan containing the cabbage mixture. Stir thoroughly, allowing the flavors to harmonize. Take a moment to taste and, if desired, adjust the seasoning with additional soy sauce.
  • For those who prefer a touch of sweetness, this is the time to stir in the optional packet of Splenda. Once everything is well combined and heated through, your Crack Slaw is ready to be served.
