Carnivore English Muffin

Nothing beats the satisfaction of biting into a warm, fluffy English muffin—especially when it’s low-carb and perfect for the carnivore diet. These savory muffins offer the texture of bread without the carbs, making them ideal for Eggs Benedict, a side for Biscuits & Gravy, or even as slider buns.

Ingredients
  

  • 2 cups 180 grams pork panko
  • 8 large eggs
  • ¼ cup ½ stick salted butter, melted but not hot

Instructions
 

  • Preheat your oven to 400°F.
  • In a large bowl, combine the pork panko, eggs, and melted butter. Mix thoroughly with a fork until the batter is moderately thick and well combined.
  • Spoon the batter into the muffin pan, filling each well about three-quarters full.
  • Bake for 18 to 20 minutes, or until the muffins are browned and a toothpick inserted into the center comes out clean.
  • Let the muffins cool slightly in the pan until they are comfortable to handle. Remove them and serve warm. Reheat leftovers as needed.
