Ingredients
  

  • 1 pound ground chicken
  • 1 large egg
  • 1/2 cup pork rinds crushed
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt

Optional Additions for Strict Carnivore:

  • 1 teaspoon minced garlic
  • 1 tablespoon chopped parsley

Instructions
 

  • Preheat the oven to 400°F.
  • Spray a sheet pan with cooking spray to prevent sticking.
  • In a large mixing bowl, combine ground chicken, crushed pork rinds, beaten egg, Parmesan cheese, and seasonings.
  • Mix thoroughly until the ingredients are well combined. Avoid overmixing.
  • Form the mixture into 16 meatballs, each about 1 inch in size.
  • Place the meatballs on the prepared baking sheet, ensuring space between each for even cooking.
  • Bake for 20 minutes or until golden brown and fully cooked through.
  • Let the meatballs cool slightly before serving.
