  • 12 large eggs
  • cups cottage cheese
  • 2 cups 180 grams pork panko
  • ½ cup 1 stick salted butter, melted

  • Preheat your oven to 375°F. Line a 9-by-5-inch loaf pan with parchment paper, ensuring the edges extend over the sides for easy removal.
  • Combine the eggs, cottage cheese, pork panko, and melted butter in a food processor. Blend until the mixture is smooth and creamy.
  • Pour the batter into the prepared loaf pan. Bake for about 1 hour or until the bread is browned and a toothpick inserted into the center comes out clean.
  • Allow the bread to cool slightly before removing it from the pan. Let it cool completely on a wire rack before slicing. For the best results, toast slices before serving
