Mediterranean cooking is all about using fresh ingredients and bold spices to create delicious, wholesome meals.

In this dish, ground lamb is seasoned with harissa, paprika, garlic, and oregano, creating a deep, smoky flavor that pairs beautifully with the creamy hummus.

The addition of tomatoes adds a touch of acidity, while fresh dill provides a bright contrast.

One of the key elements in this recipe is the toasted pistachios. They add a bit of crunch and a rich, nutty taste that complements the lamb. Meanwhile, warm pita bread serves as the perfect way to scoop up all the flavors in each bite.

  • Make it a Bowl or Wrap: Serve the lamb and hummus in a bowl over greens or rice, or wrap it in pita for an easy handheld meal.
  • Add More Toppings: Try crumbled feta, pickled onions, or pomegranate seeds for a unique twist.

If you love bold flavors, you can also increase the harissa for extra heat or add a squeeze of lemon juice to brighten up the dish.

While this recipe is easy, a few simple tips will ensure the best results:

  • Use Fresh Hummus: Whether store-bought or homemade, a smooth and flavorful hummus makes a big difference.
  • Toast the Pita: Warming the pita in the oven brings out its softness and makes it perfect for scooping.
  • Don’t Overcook the Lamb: Keep it juicy by cooking it just until browned.

For meal prep, store the lamb separately from the hummus and reheat before serving to maintain the best texture and flavor.

Ingredients

  • 4 pita breads
  • 2 tablespoons extra-virgin olive oil
  • 1 pound ground lamb
  • teaspoons kosher salt divided
  • 1 tablespoon harissa
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 bunch fresh dill
  • ¼ cup toasted pistachios
  • 1 15-ounce can diced tomatoes (with juices)
  • 1 10-ounce container hummus

Instructions

  • Warm the pita: Preheat the oven to 300°F. Wrap the pita in aluminum foil and place them directly on the oven rack to warm while preparing the rest of the meal.
  • Cook the lamb: Heat the olive oil in a large skillet over medium-high heat. Add the lamb, 1 teaspoon of salt, harissa, smoked paprika, garlic powder, and oregano. Break the lamb into small crumbles using a wooden spoon and cook until browned and cooked through, about 7 to 8 minutes.
  • Prepare the toppings: While the lamb is cooking, finely chop the tender stems and fronds of the dill. Roughly chop the pistachios.
  • Simmer the tomatoes: Add half of the chopped dill, the diced tomatoes with their juices, and the remaining ½ teaspoon salt to the skillet. Lower the heat to medium and continue cooking until the mixture thickens to a consistency similar to Bolognese sauce, about 6 to 7 minutes.
  • Assemble the bowls: Divide the hummus evenly among four serving bowls. Use a spoon to spread it across the bottom of each bowl. Top with the lamb and tomato mixture, distributing it evenly. Sprinkle with chopped pistachios and the remaining dill. Serve warm with the toasted pita for scooping.

Notes

Grain Bowl Option: Serve over rice, quinoa, or any grain with fresh greens like arugula for a hearty grain bowl.
Protein Swap: Substitute ground beef or pork for the lamb.
Extra Topping Idea: If hummus isn’t your favorite, try adding store-bought tzatziki for a creamy twist.
