  • Whip the Cream: Chill a mixing bowl for 10 minutes. Then, whip the heavy cream in it until stiff peaks hold.
  • Blend the Filling: In a separate bowl, beat the softened cream cheese until smooth. Add confectioners’ sugar and mix until fully combined. Fold the whipped cream in gently using a spatula.
  • Layer the Cheesecake: Spoon the filling over the crust, smoothing the top. Place in the fridge and let it firm up for a minimum of 5 hours.
  • Make the Ganache: Heat heavy cream until hot but not boiling. Pour over chocolate chips and let sit for a minute, then stir until smooth and glossy.
