Instructions

  • Broil the Salmon: Set your oven to broil. Lay the marinated salmon skin-side up on a foil-lined tray. Broil for 7–8 minutes until fully cooked and the skin is nicely crisped. Discard the skin and shred the fish with a fork.
  • Make Crispy Rice Waffles: Heat and lightly oil your waffle maker. Press a layer of seasoned rice into the machine and cook for 8 minutes until the exterior is golden and crispy.
  • Prepare the Toppings: Mash avocados with lime juice into a smooth spread. Cut cucumbers into thin slices.
  • Assemble the Sushi Waffles: Lay the rice waffles onto serving plates. Spread avocado mash on each one, layer on cucumber slices and flaked salmon, then drizzle with your preferred sauces. Top with sesame seeds and serve with pickled ginger and lime wedges.
