Instructions
 

  • Preheat and Prepare: Preheat your oven to 350°F. Line two sheet pans with parchment paper for easy cleanup.
  • Cream Butter and Sugars: In a stand mixer fitted with the paddle attachment, combine the softened butter, light brown sugar, and granulated sugar. Beat on medium-high speed until light and fluffy, approximately 2 minutes.
  • Add Wet Ingredients: Scrape down the sides of the bowl, then add the egg, vanilla extract, and almond extract. Continue beating on medium-high speed until the mixture is smooth, about 1 minute.
  • Mix Dry Ingredients: Add the all-purpose flour, baking soda, and salt to the bowl. Mix on low speed just until the dry ingredients are combined, avoiding overmixing.
  • Fold in Add-Ins: Remove the bowl from the mixer. Using a silicone spatula, gently fold in the white chocolate chips and rainbow sprinkles, ensuring even distribution.
  • Portion Dough: Use a 1½-ounce cookie scoop (or a large spoon) to portion out equal amounts of dough, approximately 3 tablespoons per cookie. Roll the dough into smooth balls and place them 2 inches apart on the prepared baking sheets.
  • Bake: Bake the cookies in the preheated oven for 11 to 13 minutes until they have puffed up, with set edges but a slightly soft center.
  • Cool: Allow the cookies to rest on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
