Tofu Spaetzle & Gruyère Gratin Dinner Recipe

Ingredients
  

  • 5 tablespoons unsalted butter
  • 2 large onions halved and thinly sliced
  • 4 sprigs fresh thyme
  • 2 packages 14 to 16 ounces each extra-firm tofu drained and patted dry
  • 8 ounces Gruyère cheese grated (about 2 cups)
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon kosher salt
  • ½ cup panko bread crumbs gluten-free if desired

Instructions
 

  • Cook the Onions: Melt 3 tablespoons of butter in a large skillet or heavy pot over medium-high heat. Add the sliced onions and thyme sprigs, stirring frequently as they cook. Continue cooking until the onions are soft and deeply golden, about 40–55 minutes. Lower the heat if needed to avoid burning, and stir regularly to ensure even caramelization. Remove the thyme sprigs once done.
  • Prepare the Tofu: Place a clean kitchen towel on a baking sheet. Using the coarse side of a box grater, shred the tofu and spread it evenly over the towel. Lay another towel on top and press gently to remove as much moisture as possible.
  • Preheat the Oven: Set the oven to 375°F so it’s ready for baking.
  • Combine Ingredients: In a large mixing bowl, toss together the shredded tofu, caramelized onions, 1¼ cups of Gruyère cheese, black pepper, nutmeg, and salt. Mix until well-combined, ensuring the flavors are evenly distributed.
  • Assemble the Dish: Transfer the tofu mixture into an 8 x 12-inch gratin or baking dish. Spread it out evenly. Sprinkle the panko breadcrumbs over the top, followed by the remaining ¾ cup of Gruyère cheese. Dot the surface with the remaining 2 tablespoons of butter, ensuring it’s evenly distributed for browning.
  • Bake the Gratin: Place the dish in the preheated oven and bake for 25–35 minutes, or until the cheese is melted and bubbling, and the top is golden brown.

Notes

  • Gruyère can be substituted with fontina, gouda, smoked mozzarella, or cheddar for a different flavor profile.
