Ingredients
  

  • 1 lb pork shank cut into large chunks
  • 3 tbsp tallow
  • Salt to taste

Instructions
 

  • Preheat the air fryer to 375°F.
  • Season the pork shank: Coat the pork shank chunks with 2 tbsp of melted tallow and season with salt.
  • Cook the pork shank: Place the pork shank in the air fryer basket. Air fry for 20-25 minutes, flipping halfway, until the internal temperature reaches 160°F and the outside is crispy and golden brown.
  • Baste with tallow: In the last 5 minutes of cooking, brush the pork shank with the remaining 1 tbsp of tallow for extra flavor.
  • Rest and serve: Let the pork shank rest for 5 minutes before serving hot.
