Strawberry-Lime Granita for Anti-Inflammation

Ingredients
  

  • 1 cup water
  • ½ cup raw cane sugar
  • 1 lb strawberries stems removed
  • ½ cup lime juice

Optional Variations:

  • Add ½ tsp ground ginger for extra anti-inflammatory benefits.
  • Substitute 2 tbsp honey for part of the sugar for a natural sweetener option.

Instructions
 

  • Prepare Simple Syrup: Combine water and sugar in a medium saucepan over low heat, stirring until the sugar dissolves. Remove from heat and place the pan in an ice-water bath to chill rapidly. Alternatively, refrigerate for about 3 hours until fully chilled.
  • Prepare Strawberries: Reserve 4–6 strawberries for garnish. Blend the remaining strawberries in a blender or food processor until smooth. Strain the purée through a fine-mesh sieve into a medium bowl to remove seeds.
  • Combine Flavors: Mix the lime juice and ½ cup of the simple syrup into the strawberry purée. Stir to combine, and taste, adding more simple syrup if desired.
  • Freeze the Mixture: Pour the strawberry mixture into a 13x9-inch nonstick metal baking pan. Freeze until the edges begin to harden, about 25 minutes. Stir the icy portions into the center of the pan using a fork.
  • Create Granita Texture: Repeat the stirring process every 25 minutes for about 1½ hours, or until the mixture forms flaky crystals. Cover tightly and freeze for up to 1 day.
  • Serve: Spoon the granita into serving bowls or glasses and garnish with the reserved strawberries.

Notes

Storage Tip: The granita can be stored in the freezer for up to 1 day; re-fluff with a fork before serving.
