Ingredients
  

  • 2 large chicken breasts
  • ½ cup cottage cheese
  • ½ cup fresh spinach chopped
  • ¼ cup shredded mozzarella cheese

  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375°F.
  • Slice each chicken breast horizontally to create a pocket for stuffing.
  • In a bowl, mix together cottage cheese, chopped spinach, mozzarella, garlic powder, salt, and pepper.
  • Stuff the cheese mixture evenly into each chicken breast pocket and secure with toothpicks.
  • Heat olive oil in a 10-inch skillet over medium heat. Sear each side of the stuffed chicken for 2 minutes to develop a golden crust.
  • Transfer seared chicken to an oven-safe baking dish.
  • Bake for 20–25 minutes, or until chicken is fully cooked (internal temperature should reach 165°F).
  • Remove toothpicks and serve hot.
