Soul Food Yardbird Biscuits with Pepper Peach Jelly

Ingredients
  

For the Biscuits

  • 6 biscuits see recipe for Southern Raised Biscuits with Spicy Sausage Cream Gravy or your favorite biscuit recipe

For the Chicken

  • 6 boneless, skinless chicken thighs

For the Pepper Peach Jelly

  • 3 tablespoons unsalted butter
  • 2 fresh jalapeños sliced
  • 4 cups sliced and peeled fresh peaches
  • ½ cup brown sugar
  • ¼ cup white sugar
  • ¼ teaspoon salt
  • ½ cup orange juice

For Assembly

  • Sliced Cheddar cheese

Instructions
 

Prepare the Biscuits

  • Follow your chosen biscuit recipe to make 6 fluffy, buttery biscuits. Set aside once baked.

Prepare the Fried Chicken

  • Marinate the chicken thighs overnight and cook them as directed in the Southern Fried Cornish Hens recipe, replacing the hens with chicken thighs.

Make the Pepper Peach Jelly

  • In a small saucepan, melt the butter over medium heat.
  • Add the sliced jalapeños and sauté for about 2 minutes, until they begin to soften.
  • Stir in the peaches, brown sugar, white sugar, salt, and orange juice.
  • Cook the mixture over medium-high heat for approximately 25 minutes, stirring occasionally, until it thickens into a jam-like consistency.
  • Remove from heat and let it cool.

Assemble the Biscuits

  • Split the biscuits in half and place a slice of Cheddar cheese on the bottom half.
  • Set the biscuit halves under the broiler for a few moments until the cheese melts.
  • Once melted, place a crispy fried chicken thigh on top of the cheese.
  • Spoon a generous amount of pepper peach jelly over the chicken.
  • Cover with the top half of the biscuit and serve immediately.

Notes

  • For extra heat, add a pinch of red pepper flakes or extra jalapeños to the jelly.
  • Serve with a side of coleslaw or crispy fries for a full Southern soul food experience.
  • Buttermilk biscuits work best for this recipe, providing a soft, flaky texture that pairs well with the fried chicken.
