  • 1 onion chopped

  • Place the dried pinto beans in a large bowl the night before and cover them with water. Allow the beans to soak overnight, ensuring they are fully submerged.
  • Drain the soaked beans in the morning and thoroughly rinse under running water.
  • Transfer the rinsed beans to your slow cooker.
  • Add the chopped onion to the slow cooker, along with the vegetable oil. Stir the ingredients to combine them evenly.
  • Pour in the water, ensuring the beans are covered by about an inch of liquid. Adjust the amount of water as needed.
  • Place the lid on the slow cooker and set it to low heat. Allow the beans to cook for 10-12 hours or until they reach your desired level of tenderness.
  • Once the cooking time is complete, turn off the slow cooker and let the beans cool for a few minutes.
