Instructions
Lightly coat the inside of a 4- to 5-quart slow cooker with cooking spray. In a separate bowl, whisk together the eggs, milk, and Bisquick mix until smooth.
Pour the egg mixture into the prepared slow cooker. Add the spinach, 1 1/2 cups of feta cheese, bell peppers, basil, garlic, and sausage. Stir gently to combine all the ingredients.
Cover the slow cooker and cook on High for 3 to 4 hours, or on Low for 5 to 6 hours. The quiche is ready when the center is set and the edges are a beautiful golden brown.
Once cooked, carefully cut the quiche into wedges or squares. Top each serving with a sprinkle of feta cheese for an extra burst of flavor.
Notes
Tip 1: Perk up your brunch spread with a side of fresh orange slices, refreshing white grape juice, and flaky mini croissants to perfectly match the Mediterranean flavors of this crustless quiche.Tip 2: No feta? No problem! Feel free to substitute 1 1/2 cups of shredded pepper jack cheese or mozzarella cheese for an equally delicious twist on this recipe.
