  • 1 pound boneless skinless chicken breasts
  • 1 medium onion sliced or diced
  • 15 ounces can chickpeas drained and rinsed
  • 2 medium sweet potatoes peeled and diced
  • ½ cup light coconut milk
  • ½ cup low sodium chicken stock
  • 15 ounces can tomato sauce
  • 2 tbsp salt-free curry powder
  • 1 tsp salt
  • ½ tsp cayenne powder optional
  • 1 cup frozen green peas
  • 2 tbsp lemon juice
  • Fresh cilantro for garnish optional

Instructions
 

  • In a slow cooker, combine coconut milk, chicken stock, tomato sauce, curry powder, salt, and cayenne, whisking until well blended. Gently mix in chicken breasts, onion, chickpeas, and sweet potatoes using tongs, ensuring that all ingredients are evenly coated in the sauce.
  • Set the slow cooker to low and cook for 8 hours or high for 4 hours. Once the cooking time is complete, use two forks to shred the tender chicken.
  • Five minutes before serving, add frozen peas and a squeeze of fresh lemon juice to the slow cooker, stirring to incorporate.
