Ingredients
  

  • 8 cups salad greens e.g., arugula, spinach, or mixed greens
  • 1 to 2 tablespoons vinegar fresh lemon juice, or fresh lime juice
  • Fine sea salt and freshly ground black pepper to taste
  • 1 small garlic clove grated or minced (optional)
  • ¼ cup extra-virgin olive oil plus more if needed
  • 1 ripe avocado pitted, peeled, cubed, and seasoned with salt (optional)

Instructions
 

  • Place the salad greens in a large bowl. Drizzle with vinegar or citrus juice, and season with sea salt and black pepper to taste. Add the grated garlic, if using, and toss gently.
  • Drizzle the olive oil over the greens and toss again until the salad is evenly coated.
  • (Optional) If using avocado, salt the cubes while on the cutting board before adding them to the salad. Add the avocado after tossing the salad to prevent it from breaking down. Serve immediately.

Notes

  • For the best flavor, toss the greens with your hands to ensure an even coating of dressing.
  • This recipe works with any type of salad greens you have on hand, but darker, slightly bitter greens like arugula or spinach add a delightful depth of flavor.
