Simple 15-Bean Soup with Sausage & Spinach One Pot Recipe

8ounceshot or sweet Italian chicken sausagecasings removed, broken into 1-inch pieces
1onionchopped fine
6garlic clovesminced
1tablespoonminced fresh thyme or 3/4 teaspoon dried thyme
1/4teaspoonred pepper flakes
1/4teaspoontable salt
8cupschicken broth
8ounces1 1/2 cups 15-bean soup mix, seasoning packet discarded, beans picked over and rinsed
8ounceswhite mushroomstrimmed and quartered
1/8teaspoonbaking soda
2bay leaves
4ounces4 cups baby spinach

Instructions
In a microwave-safe bowl, combine sausage, onion, garlic, thyme, red pepper flakes, and salt. Microwave the mixture, stirring occasionally, until the onion softens, about 5 minutes. Transfer the mixture to the slow cooker.
Add chicken broth, beans, mushrooms, baking soda, and bay leaves to the slow cooker. Stir to combine. Cover and cook on low for 8 to 10 hours or on high for 5 to 7 hours, until the beans are tender.
Remove and discard the bay leaves. Add baby spinach to the soup one handful at a time, stirring to wilt. Let the soup sit for about 5 minutes before serving.
