Ingredients
  

For the Shortcut Dan Dan Sauce (makes 2¼ cups)

  • cups chili oil
  • cup light soy sauce
  • 1 tablespoon sugar
  • 2 tablespoons Chinese sesame paste
  • 5 teaspoons dark soy sauce
  • 4 teaspoons chicken bouillon paste
  • 1 teaspoon ground Sichuan peppercorns
  • ¼ teaspoon five-spice powder

For Each Serving of Noodles (multiply as needed)

  • 3 to 4 ounces ground pork or chicken for variation
  • 1 teaspoon Shaoxing wine
  • ¼ teaspoon cornstarch
  • 1 tablespoon neutral oil
  • 2 medium garlic cloves minced
  • 2 tablespoons Sichuan preserved vegetables
  • 5 ounces fresh white wheat noodles or 2.5 ounces dried
  • 1 handful fresh spinach leaves
  • 2 tablespoons Shortcut Dan Dan Sauce

Instructions
 

  • Prepare the Sauce: In a clean, sterilized glass jar, combine the chili oil, light soy sauce, sugar, sesame paste, dark soy sauce, chicken bouillon paste, Sichuan peppercorns, and five-spice powder. Mix well with a clean spoon or whisk until fully blended. Seal the jar with a tight-fitting lid and refrigerate; the sauce will stay fresh for up to 6 months.
  • Marinate the Pork: In a small bowl, combine ground pork, Shaoxing wine, and cornstarch. Let it sit for 15 minutes while you prepare the rest of the ingredients.
  • Boil Water: While the pork marinates, bring a large pot of water to a rolling boil for the noodles and spinach.
  • Cook the Pork: Heat a wok over high heat. Once it's nearly smoking, add the neutral oil followed by the marinated pork. Stir frequently, cooking until the meat is golden brown and crispy, about 1 to 2 minutes. Add minced garlic and Sichuan preserved vegetables, sautéing for another minute just until the garlic softens.
  • Cook Noodles and Spinach: Follow the package instructions to cook your noodles. During the final 30 seconds, add spinach directly to the boiling water to wilt it slightly. Drain both together once done.
  • Assemble the Bowls: Divide the noodles and spinach into bowls. Spoon over the Shortcut Dan Dan Sauce and top with the pork mixture. Mix everything in the bowl just before eating to evenly coat the noodles. If needed, add a splash of the hot noodle water to loosen the sauce.

Notes

  • For a vegetarian version, simply omit the pork and chicken bouillon paste in the sauce.
  • Shanghai-style or slightly thicker noodles hold up well with the richness of the sauce.
  • The Shortcut Dan Dan Sauce is a great base for stir-fries or rice bowls too.
