Ingredients
  

  • 1 tablespoon unsalted butter
  • 4 large eggs
  • Pinch of fine sea salt
  • 1 ounce cream cheese cut into small dice (about 2 tablespoons)
  • 3 ounces smoked trout flaked
  • 1 tablespoon fresh chives
  • ½ teaspoon freshly ground black pepper
  • Salmon or trout roe optional
  • Buttered toast or bagels for serving

Instructions
 

  • Warm the butter in a nonstick skillet over medium-low heat. While the butter melts, whisk the eggs with a pinch of salt in a small bowl. Pour the beaten eggs into the skillet.
  • Sprinkle the cream cheese pieces evenly over the eggs. Gently stir the eggs with a wooden spoon every 10 seconds, allowing soft, large curds to form. This process should take about 30 seconds to 1 minute.
  • When the eggs are almost set but still slightly soft and moist, remove the skillet from the heat. Carefully fold in the smoked trout, chives, and black pepper. Let the eggs rest for about a minute to finish cooking gently.
  • Serve immediately, topped with salmon or trout roe if desired, alongside buttered toast or bagels for a complete meal.
