Ingredients
  

  • 6 large eggs
  • 4 slices sugar-free bacon optional
  • 2 tbsp clarified butter or tallow for greasing
  • Salt to taste

Instructions
 

  • Preheat the air fryer to 350°F.
  • Cook the bacon (optional): Place the bacon in the air fryer basket and cook for 6-8 minutes until crispy. Remove, chop into small pieces, and set aside.
  • Prepare the egg mixture: In a bowl, whisk the eggs with a pinch of salt.
  • Grease the molds: Lightly grease silicone muffin molds or ramekins with clarified butter or tallow.
  • Assemble the egg muffins: Pour the egg mixture into the greased molds. If using bacon, sprinkle the chopped bacon evenly into each mold.
  • Cook the muffins: Place the molds in the air fryer and cook for 8-10 minutes, or until the eggs are fully set.
  • Serve: Remove the egg muffins from the molds and serve hot.
