Sardine Crostini with Seared Tomatoes Dinner Recipe

Instructions
Cook the Tomatoes: Warm the olive oil in a skillet over medium-high heat. Place the cherry tomatoes in the skillet cut-side down and let them cook without stirring for 2–3 minutes, until they start to blister and soften. Add the sherry vinegar and season with salt and black pepper. Toss the tomatoes gently, shake the skillet a few times, and then remove it from the heat.
Prepare the Toasted Bread: Take the slices of bread and rub both sides with the cut garlic clove. Lightly toast the bread until it’s golden and fragrant. Drizzle the toasted bread with a little olive oil.
Assemble the Crostini: Arrange the toasted bread slices on serving plates. Layer each toast with sardines, the seared cherry tomatoes, and the sliced onion or shallots. Sprinkle fresh parsley or chives over the top, along with a pinch of flaky sea salt. Drizzle with additional olive oil for extra flavor, if desired.
